Butternut and Apple Harvest SoupIngredients
1/4 cup butter
4 large leeks (white and pale green parts only), chopped
2 large onion, chopped
2 large potato, peeled and cubed
4 cups cubed butternut squash
2 cups diced carrots
2 Granny Smith apple, peeled, cored, and sliced 1/4-inch thick
8 cups chicken stock
1/2 cup dry white wine (optional)
1 cup light cream
1/2 teaspoon ground nutmeg
salt and pepper to taste
1/4 cup chopped chives
Directions
Melt butter in a large pot over medium heat. Stir in leeks and onions, and cook until the onion softens and turns translucent, about 5 minutes. Add potato, squash, carrots, apple, and chicken stock. Bring to a boil, then reduce heat to medium-low, cover, and simmer until the vegetables are soft, about 20 minutes.
Carefully puree the soup in batches in a blender, or use a stick blender to puree the soup right in the pot. Once the soup has been pureed, return it to the pot and stir in wine and cream. Season with nutmeg, salt, and pepper; simmer gently for 5 minutes. Ladle into bowls and garnish with chopped chives.
Maple Apple Crisp
Ingredients
5 apples - peeled, cored, and sliced
3/4 cup maple syrup
1/2 cup all-purpose flour
1/2 cup rolled oats
1/2 cup brown sugar
1 pinch salt
1/2 cup butter, softened
Directions
Preheat oven to 375 degrees F (190 degrees C).
Place apples in an 8x8 inch baking dish. Toss apples with syrup. In a separate bowl, mix together flour, oats, sugar, and salt. Cut in butter until mixture is crumbly. Sprinkle mixture evenly over apples.
Bake in the preheated oven for 35 minutes, until topping is golden brown. Serve warm or at room temperature.
Mummy Toes
Ingredients
1 (16 ounce) package cocktail sausages
12 (6 inch) flour tortillas
toothpicks
1/4 cup ketchup, for garnish
1/4 cup mustard, for garnish
Directions
Preheat an oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
Make a small slit into one end of each cocktail wiener to resemble a toenail. Cut the tortillas into strips 4 inches long by 1 inch wide, and place onto a microwave safe plate. Cook the tortillas in the microwave a few seconds until pliable. Wrap each sausage with a strip of tortilla, and secure with a toothpick. Make sure the toenail side is sticking out. Place the mummy toes onto the prepared baking sheet.
Bake in the preheated oven for 10 minutes. Remove from the oven, and allow to cool slightly. Place a squirt of ketchup or mustard where the wedge is to resemble a bloody toenail, or of course an infected toenail. Serve to unsuspecting guests.
